四国山脈の天然水でつくる昔ながらのお豆腐Traditional tofu prepared using natural waters of the Shikoku mountains

三好市に古くからある伝統的な固めの豆腐は、祖谷地方で主に生産されていました。険しい山道を移動する際、崩れないように固くしまった豆腐が作られたと言われています。その郷土料理である「岩豆腐」を研究と試作を繰り返して再現しました。独特の固さに最初は驚きますが、かみしめるほどに大豆の旨味が広がり、柔らかい豆腐にはない、ずっしりとした食べ応えがあります。豆腐づくりは毎日が真剣勝負。同じように作っても均一なものにはならないため、その日その日で細やかな調整が必要となってきます。職人の経験と勘を活かし、熟練の技で豆腐を作り上げていきます。豆腐屋は地域密着の仕事だからと、生産者の顔が見える商品づくりを心がけています。古くからある食文化を大切にし、豆腐の持つパワーを大勢の人に伝えたいとの思いで日々岩豆腐を作り続けています。

In Miyoshi City, traditional hardened tofu has been produced primarily in the Iya region since the old days. It is believed that the tofu was hardened so as to avoid it from crumbling while traveling on the steep mountain roads. The local specialty “iwa tofu" was revived after repeated studies and trials. It's peculiar hardness is surprising at first but once you chew it, the taste of soybeans spreads into the mouth. Unlike soft tofu, it feels heavy after eating. Tofu making is a serious fight everyday. It does not turn out to be the same even if prepared using the same methods, therefore day-to-day fine adjustments are required. The tofu makers prepare tofu while relying on their experience, intuition, and skills. Since tofu making is a local-based work, producers try to add their personal touch to it. Cherishing the ancient food culture, every day they create iwa tofu with the intention of conveying the power of tofu to a great number of people.
